Now normally I do not eat eggplant. Or Aubergine. Whatever the hell you want to call it, I aint a huge fan of that purple bastard.
It has to be cooked just right or it’s a trip to slime city.
However, on the Thug Kitchen blog they have the most AMAZING smoky eggplant dip. It’s so goddamn tasty that I have made it countless times.
So I thought I’d try the soba noodles with the egglant and basil leaves from the recipe book and it did not dissappoint. Instead it wow-ed.
I feel like eggplant and I can now have a a rocky marriage. A love-hate relationship, if you will.

Seriously, it’s like a thousand little tastebud angels have kidnapped and blindfolded me and danced wildly on my tongue. Then they’ve whipped off the blindfold and gone ‘LOOK MOFO!! ITS FUCKING EGGPLANT!!’ and surprised the hell outta me.
So if you wanna experience the same eggplant party in your mouth you gotta go cook this RIGHT NOW.
